6 x sun-dried tomatoes in oil, drained and chopped

5 x sun-dried tomatoes in oil, drained

2 tbsp red wine vinegar

6 tbsp good olive oil

1 x garlic clove, diced

1 tsp capers, drained

2 tsp Kosher Salt

3/4 tsp freshly ground black pepper

1 cup freshly grated Parmesan cheese

1 cup packed basil leaves, julienned
