3 pounds young okra, trimmed and split lengthwise

2/3 cup light-tasting oil, such as grapeseed or canola


3/4 cup soy sauce

1/2 cup oyster sauce

2 tablespoons Asian fish sauce

1/4 cup white vinegar

1/4 cup dry sherry

1/4 cup brown sugar

1/4 cup honey

1/2 bunch basil, leaves only, finely minced

1/4 bunch mint, leaves only, finely minced

1/3 bunch cilantro, finely minced

3 serrano chiles, seeded and finely minced

1 tablespoon finely minced garlic

1 tablespoon finely minced fresh ginger

1 1/2 tablespoons Asian chile sauce

Zest of 1 lime, finely minced

Juice of 3 limes

1/2 tablespoon black pepper

2 teaspoons hot red chile flakes


3 Roma tomatoes, thinly sliced

1 bunch scallions, thinly sliced on the diagonal
