2 cup raw cashew pieces

2 cup Vegetable Broth

2.5 lb Yukon Gold potatoes

2 lb cauliflower in large florettes

2 lb carrots, sliced on a bias 1/2 inch thick

2 medium yellow onions

2 inch nub of ginger

8 cloves Garlic

2 tsp red pepper flakes

3 tbsp Peanut Oil

1 tbsp coriander, crushed

2 tbsp Red Pepper Flakes

1 tbsp curry powder

2 tsp Garam Masala

Black Pepper

2 tsp salt

1 tbsp tamarind concentrate

2 tbsp tomato paste

4 cup Vegetable Broth

1 can Coconut Milk

2 cup Frozen peas

1 x caramelized red onion

Chopped cilantro for garnish
