1/4 teaspoon ground cumin

1/4 teaspoon paprika

20 ounces all-purpose flour, plus extra for kneading and rolling

2 1/4 teaspoons kosher salt

5 ounces 2 percent milk

5 ounces water

7 1/2 ounces lard

1 large egg yolk, beaten

1 tablespoon water
