2 (10 ounce) packages frozen chopped spinach

4-6 garlic cloves , finely chopped

salt and black pepper

24-28 ounces fresh ravioli, large package, such as Contadina brand, choose your favorite filling, such as wild mushroom or 4 cheese

2 tablespoons extra-virgin olive oil

salt and pepper

2 tablespoons all-purpose flour

1/2 cup grated parmigiano-reggiano cheese

2 cups grated provolone cheese or Italian cheese blend

1 lb thin asparagus spear , trimmed of tough ends

1/4 teaspoon nutmeg

1/2 cup cream or half-and-half

14 ounces water-packed artichoke hearts , drained well

2 cups vegetable stock (or chicken)

2 tablespoons butter
