  • 2 cups whole wheat all-purpose flour
  • 1 Tbsp baking powder
  • 1 1/2 tsp. salt
  • 1 cup milk (I used 3/4 cup skim milk and 1/4 cup cream)
  • 3-4 ripe tomatoes
  • 2 ears fresh corn
  • 1 cup cherry tomatoes
  • 10 leaves basil, torn
  • 1/2 tsp. pepper
  • 2 cloves garlic, minced
  • 1/2 cup part-skim mozzarella cheese
  • 1 cup panko bread crumbs
  • 1/2 cup Parmesan cheese
