2 large garnet yams, scrubbed and split in half, lengthwise

6 teaspoons olive oil, divided

1 yellow onion, diced

4 cups vegetable or chicken stock

2 tablespoons light brown sugar

1/2 cup creamy salted peanut butter

2 teaspoons smoked pimentón (paprika)

1/4 teaspoon cayenne pepper

1 cup cream (or substitute buttermilk)

juice of 1 lime (about 1 tablespoon)

1/4 cup fresh chopped cilantro, plus extra for garnish

sea salt, to taste

2 tablespoons chopped salted peanuts, for optional garnish
