1 1/2 cups beef consommé, from a can

6 slices of thick-cut bacon, chopped

1 yellow onion, finely chopped

4 knockwurst, split lengthwise (recommended brand Boar's Head)

2 tablespoons sugar

1/2 cup cider vinegar

1/4 cup extra virgin olive oil (EVOO)

Salt and freshly ground black pepper

1 cup parsley, chopped

Spicy brown mustard, to serve
