5 tablespoons balsamic vinegar

750 g beets different sizes and colours if available

extra virgin olive oil

8 fresh sage leaves

sea salt and freshly ground black pepper

4 thick organic pork loin chops skin on

a few sprigs of fresh rosemary leaves picked

1 lemon

juice of 1 orange

750 g carrots mixed colours if available peeled

1 bulb of garlic broken apart half the cloves smashed half left whole

a few sprigs of fresh thyme leaves picked
