1 fresh basil
1 large mozzarella cheese
1 prosciutto package
Slice the eggplants, tomatoes and mozzarella into however thick slices you would like
Slice the fresh basil into fine small pieces
Stack the eggplant, tomato and mozzarella slices on top of each other, blending in layers of prosciutto
Top the stacks with fresh basil and add some salt, pepper and olive oil, and cook in the oven for 25 min in 375 degrees F.
Add the arugula either in the stacks or after the oven
