Ingredients

1 cup Pinot Noir or other dry red wine

1/2 ounce dried morel mushrooms

2 tablespoons butter

1/2 cup minced shallots

2 tablespoons minced garlic

1 1/2 pounds fresh cremini (brown) or common button mushrooms, rinsed, trimmed, and thickly sliced

1/2 cup whipping cream

1 tablespoon chopped fresh thyme leaves or 1 tsp. dried thyme

1 tablespoon fresh lemon juice

Kosher salt and freshly ground black pepper

1 1/2 cups shredded fresh asiago or jack cheese (about 6 oz.)
