Ingredients

18 dried bamboo leaves (about half of a 1-pound package)

6 green onions, thinly sliced

1/2 cup peanut oil

3 garlic cloves, thinly sliced

1/3 cup thinly sliced leeks

1 1/2 teaspoons minced fresh ginger

3 tablespoons soy sauce

3 tablespoons fermented black beans, rinsed and roughly chopped (see Notes)

2 to 2 1/2 pounds sea bass (see Notes), cut into 6 equal pieces, each about 2 inches thick

Salt, to taste

Kitchen string or twine
