1 pound green fettuccine, recipe follows

2/3 cup freshly grated Pecorino Romano

2 small plum tomatoes, blanched, peeled, seeded and finely chopped

2 tablespoons extra-virgin olive oil

1 cup dry white wine

3/4 cup dried porcini mushrooms

1 onion, finely chopped

4 extra large eggs

1 bunch baby spinach leaves, washed

1/2 pound chicken livers, coarsely chopped

3 1/2 to 4 cups all-purpose flour

2 scallions, trimmed and finely chopped

1/2 pound chicken giblets

1 clove garlic, crushed

1/2 teaspoon extra virgin olive oil

1 bay leaf

2 tablespoons tomato paste

1 carrot, finely chopped

Salt and pepper, to taste
