1/2 teaspoon salt

3/4 cup (1 1/2 sticks) chilled unsalted butter, diced into 1/2-inch cubes (best to chill cubes in the freezer for at least 15 minutes before using)

3 to 4 Tbsp chilled ice water

1 egg yolk

1 Tbsp cream
