1/4 cup extra-virgin olive oil

2 tablespoons dry white wine

2 cups all-purpose flour

1/4 cup sugar

Pinch of salt

4 large egg yolks

4 tablespoons cold, unsalted butter, cut into small pieces

2 medium-firm, tart-sweet apples such as Staymans, Winesaps or Granny Smiths—peeled, cored and coarsely chopped (2 cups)

1 cup coarsely chopped walnuts

1/2 cup golden raisins

1/4 cup pine nuts

1 teaspoon cinnamon

2 tablespoons anisette or Sambuca

1 large egg, beaten
