Ingredients for 6 servings

3 cups all-purpose flour

1 tablespoon baking powder

3/4 teaspoon baking soda

1 teaspoon salt

3 1/4 cups buttermilk

1 1/2 sticks (3/4 cup) unsalted butter, melted and cooled

3 large eggs, beaten lightly

2 tablespoons all-purpose flour

1/4 teaspoon dry mustard

3 tablespoons unsalted butter

1 1/2 cups whole milk

1 tablespoon dry white wine

3/4 pound Brie, rind discarded, cut into 1-inch pieces

1 tablespoon fresh lemon juice

1 teaspoon minced fresh tarragon leaves

1 teaspoon minced fresh flat-leafed parsley leaves

freshly ground white pepper to taste

Accompaniment: 6 hard-boiled eggs, shelled and kept warm in a saucepan of hot water

3 medium Golden Delicious apples (about 1 1/2 pounds)

1 cup sugar

1/2 cup dried sour cherries (about 4 ounces)

1/4 cup golden raisins

1/4 cup dried currants

1 1/2 cups cranberry-raspberry juice

4 teaspoons arrowroot
