1/4 cup red wine vinegar

1 medium shallot, finely diced

1 tablespoon good quality extra virgin olive oil

1 tablespoon Dijon mustard

salt and fresh ground pepper to taste

4 ounces smoked salmon

1 packed cup pea shoots or baby arugula leaves, optional to garnish
