Approximately 1/4 cup sugar, optional

1 bunch fresh rosemary sprigs, broken into 2-inch lengths, optional

Filling and Frosting

1/4 teaspoon cream of tartar

2 large eggs, at room temperature

Hazelnut-Mocha Bûche de Noël

1/4 teaspoon salt

1 teaspoon vanilla extract

2 tablespoons cocoa powder, preferably Dutch-process

Cocoa powder for dusting

1 1/2 teaspoons coffee liqueur, such as Kahlúa Assembly and Decorations

1/2 cup granulated sugar, divided

1 tablespoon boiling water

1 teaspoon baking powder

1/4 cup cold water
