Salt and pepper

1 cup diced onion

1/2 teaspoon ground coriander

1/4 teaspoon ground cumin

1/4 teaspoon caraway seeds

2 mild to medium crumbled dried chiles (such as New Mexican; earthy.com) or 1/4 teaspoon red-pepper flakes

2 cups low-sodium chicken stock

1 teaspoon plain yogurt, for garnish
