4 large eggs, beaten

1 medium yellow onion, finely chopped

4 cloves garlic, finely chopped

1/2 cup grated parmesan or Gruyere cheese

1/3 cup coarsely chopped green olives

1/3 cup chopped parsley

1 tablespoon lemon zest

1 cup panko bread crumbs

1/2 teaspoon coarsely ground black pepper or crushed red pepper flakes

1 tablespoon water

2 tablespoon olive oil
