Ingredients for 5 servings

1 chicken, about 5 lb.

11 Tbs. extra-virgin olive oil

3 Tbs. spice rub (from ultimate grilling rub collection)

1/2 cup pilsner beer

2 1/2 lb. small new potatoes, boiled until just tender and halved

2 red or yellow bell peppers, seeded and cut into 1-inch dice

4 green onions, white and light green portions, cut on the bias into thin, 2-inch-long pieces

Kosher salt and freshly ground black pepper, to taste

2 Tbs. whole grain mustard

2 Tbs. apple cider vinegar

1/4 tsp. red pepper flakes

2 Tbs. honey
