Ingredients for 8 servings

1 x whole chicken

3 x fried yellow onions not too browned

4 x chicken thighs and drumsticks

1 x daikon turnip, peeled and half of the daikon shredded

1 x yellow onion

1 x (1-inch) chunk rock sugar

3 tbsp thai basil, chopped

3 tbsp Vietnamese mint, chopped

2 x sprigs rau răm, chopped

3 x sprigs ngò gai chopped

1 x red onion (or shallot for a stronger flavor)

2 tsp mushroom seasoning salt (or salt)

1 tsp salt

4 x limes

1/4 cup peanuts

chili salt (optional)

1 x (2-inch) chunk fresh ginger

3 x cloves pickled garlic, finely minced

1 1/2 tbsp sugar

2 tsp brown sugar

1 tbsp soy sauce

1 tbsp dried fried shallot (store-bought)

1/4 tsp black pepper, freshly ground

1 x red Thai bird chile (optional), stemmed, seeded and thinly sliced

2 cup Chinese cabbage, shredded
