3 tbsp olive oil

1/2 red onion, chopped

1/2 green bell pepper, chopped

12 oz mushrooms, sliced

2 cloves garlic, minced

1 tsp paprika

1 tsp dried oregano

1 tsp dried thyme

1/4 tsp freshly ground black pepper

1/8 tsp ground red pepper

1 1/2 C short-or long-grain rice

2 1/2 C chicken or vegetable stock (we used Kitchen Basics)

1 1/2 C chopped tomatoes (from 26 oz box)

1 1/2 tsp salt

9 oz baby spinach, roughly chopped

1 C frozen peas

1 C frozen artichoke hearts (halves and quarters)

2 tbsp red wine vinegar

1/4 C chopped fresh parsley
