For the Ginger Fudge Shortcake

1 tablespoon syrup from jar or preserved ginger

Half a teaspoon ground ginger

300 ml Jersey & Guernsey milk

1 good teaspoon ground ginger

50 g cornflour

For the Ice Cream

100 g Jersey & Guernsey butter

2 pieces preserved ginger, chopped into shred

2 whole eggs
