5 tablespoons ground annatto seed (Achiote)

3 habanero peppers , minced

2 tablespoons salt

8 garlic cloves (or 1/3 cup of garlic, peeled and minced)

1 cup lemon juice

3 tablespoons tequila

2 teaspoons ground cumin

1/2 cup orange juice

1/2 teaspoon whole cloves

8 whole allspice
