Ingredients for 4 servings

30 ml /2 tbsp of olive oil

4 lamb shanks

4 garlic cloves, roughly chopped

3 onions, finely chopped

1 carrot, finely diced

1 stalk of celery, finely sliced

350 ml /12 fl oz of red wine

A few sprigs of thyme, tied in a bunch with string

650 ml /1 ½ pts of stock (vegetable or beef)

2 tablespoons of cornflour

A good pinch of sea salt and ground black pepper

1 kg potatoes, peeled and diced

250 g cabbage, finely sliced

1 bunch of spring onions, finely sliced

2 tablespoons of butter

75 ml of milk or cream

A good pinch of sea salt and black pepper
