4 tablespoons balsamic vinegar

1 handful of pinenuts

3 heaped tablespoons fennel seeds

extra virgin olive oil

sea salt and freshly ground black pepper

Preheat your oven to 200 C 400 F gas 6

3 cloves of garlic peeled and finely sliced

a pork loin preferably the rib end off the bone

2 red onions peeled and finely sliced

1 small handful fresh sage leaves ripped up

1 small handful of fresh rosemary leaves picked

500 g sourdough or rustic bread
