2-3 C organic pesto sauce (depending on how saucy you like it)
2 C whole wheat or brown rice bow-tie pasta
1 C kalamata olives, halved and pitted
1/2 C juice from olive jar (vinegar based)
3 large organic tomatoes, diced
3 C spinach
6 cloves garlic, finely minced
1/2 large onion, slivered
2 Tbs olive oil
4 Tbs Italian seasoning
1/2 C cannellini beans, drained and rinsed
Salt and pepper to taste
Cook noodles in salted water. meanwhile, peel & slice onion, drain and rinse beans, peel & mince garlic, rince spinach, half olives, and rinse & dice tomatoes .
Add the prepped ingredients to large pan + olive oil, olive juice, & italian seasoning. Stir occasionally until everything is cooked, condensed, & aromatic: this means the compote is ready.
Strain and pat dry the cooked noodles, then mix in pesto sauce. Pour compote over each noodle serving. Complete with salt and pepper. Enjoy
