Ingredients for 4 servings

1 bay leaf

6 sole fillets (about 2 lbs)

1 dash salt

1 tablespoon chopped parsley or watercress

7 tablespoons butter (divided)

3 tablespoons flour

1/4 cup light cream

1/4 cup white wine (chardonnay)

2 tablespoons lemon juice

1/4 cup butter (melted)

1/4 cup heavy cream (whipped until soft peaks hold)

1/4 teaspoon salt

1 dash cayenne

2/3 cup water

1/2 teaspoon lemon juice

1 lb mushroom (sliced)

3 egg yolks
