2-3 small round summer squash

2-3 medium tomatoes

2-3 small peppers, any color, preferably squat and thick skinned

4 T extra virgin olive oil

2 1-inch thick slices of artisan bread, crusts removed

1/4 c milk

1/2 lb. plain pork sausage (lamb sausage would be a great variation)

2 cloves garlic, chopped

1/4 onion, minced

2 T parsley, chopped

2 T grated parmesan cheese

Sea salt and freshly ground black pepper
