Sumac chicken:

1 clove garlic, finely minced

1 1/2 teaspoons sumac

1 tablespoon olive oil

1 teaspoon kosher salt

1 to 1 1/2 pounds boneless chicken leg or breast meat

Tahini-yogurt sauce:

1/3 cup tahini paste

1/3 cup plain yogurt

1 garlic clove, finely minced

-- Salt to taste

The wraps:

4 small square sheets soft lavash bread

2 cups thinly sliced crisp lettuce, such as hearts of Romaine

1/2 English cucumber, thinly sliced

-- Spicy red chile sauce, such as harissa or Zergut brand hot pepper sauce
