Ingredients for 6 servings

2 teaspoons sea salt

1 tablespoon ground cumin

2 tablespoons chopped fresh rosemary

8 bone-in chicken thighs (about 3 pounds)

1 cup pitted prunes , halved lengthwise

1 onion , quartered (or cut into sixths if larger)

1/2 cup chopped fresh parsley

Zest and juice of 1 orange (cut into julienne strips with a  peeler, not a micro plane)

1 tablespoon sweet Hungarian paprika

2 tablespoons olive oil

One 2-inch piece of ginger , peeled and minced

1 pound pumpkin or butternut squash , peeled, seeded and cubed

4 cups chicken broth

2 garlic cloves, minced

1/2 cup chopped fresh mint

1/2 teaspoon freshly ground black pepper
