Ingredients for 6 servings

200 g (7oz) of chopped dried dates

250 g (8 oz) of soft unsalted butter

2 oranges

125 g (5oz) sugar

3 lemons

200 g (7oz) chopped dried figs

1 oz (25g) dried fig (fresh if you can get it)

For the syrup;

1 oz (25g) of toasted pine nuts

8 eggs

75 g (3 oz) plain flour

2 sprigs of fresh rosemary

250 g (8 oz) caster sugar

125 g (5 oz) roasted pinenuts

125 g (5oz) water

275 g (9 oz) ricotta
