1.5 cup stone ground grits
2 cups water
2 cups milk (I used 2%)
2 cups chicken stock
2 tbsps olive oil
1/2 onion (chopped)
2 zucchinis (sliced)
2 yellow squash (sliced)
1 Large sausage link (sliced - I used Hillshire Farm)
Bring water, milk, and chicken stock to a boil.
Add grits slowly. Lower heat to a simmer. Stir often to keep grits from sticking to pot.
Add olive oil to pan and cook onion until translucent.
Add zucchini and squash to onions and cook to preference.
Add sausage to pan and cook on medium heat until just starting to crisp.
Build bowl with grits, veggies and sausage.
