Pinch oregano

2 or 3 sliced ripe tomatoes

1/2 red pepper, thinly sliced

1/2 green pepper, thinly sliced

1 or 2 cooked beets, peeled, sliced

Handful green beans, cooked al dente

1/2 red onion, very thinly sliced

2 hard-cooked eggs, peeled, sliced

8 black Greek-style olives, pitted and halved

Handful mesclun leaves

8 to 15 basil leaves, chopped
