1 2-inch cinnamon stick

1 tbsp coriander seeds

1 tsp cumin seeds

1 tsp crushed red chilies (optional)

1/2 tsp anise seeds

1 x cardamom pod

1 tbsp dark brown sugar (optional)

Olive oil for sauteing

1 x Spanish onion, peeled and diced

3 cloves garlic, minced finely

1 medium fennel bulb, diced

2 x carrots, peeled and diced

2 x parsnips, peeled and diced

1 medium butternut squash, peeled, seeded and diced

1 x sweet potato, peeled and diced

1 x russet potato, peeled and diced

1/2 cup tomato paste

1/2 cup pitted dates, sliced thinly

1/2 cup apricots, sliced thinly

1/2 cup white wine

1 cup pearled barley

3 cup chicken stock

olive oil

salt and pepper to taste

1/2 cup flat leaf parsley, chopped
