Ingredients for 4 servings

1 pound skinless, boneless halibut, ¼-inch dice

1 cup freshly squeezed lime juice

½ red onion, diced

1 jalapeño chile diced, stem and seeds removed

1 aji amarillo chile minced, stem and seeds removed

1 ½ teaspoons aji amarillo paste

½ teaspoon freshly grated ginger

½ cup chopped cilantro

4 tablespoons extra virgin olive oil

Salt, to taste

Pickled red onion (recipe follows)

Plantain chips or tortilla chips, for serving

Sliced California avocado, for serving
