4 oz extra-firm tofu

1 cup broccoli florets

1 can (19 oz/540 mL) chickpeas

1 small sweet red pepper

1/2 seedless cucumber

1 cup halved cherry tomatoes

1/4 cup black olives , (preferably Kalamata)

3 oz mozzarella cheese , cubed (1/2 cup/125 mL)

2 tbsp chopped fresh parsley

2 oz feta cheese , crumbled

2 tbsp red wine vinegar

1 green onion , minced

2 cloves garlic , minced

1 tsp Dijon mustard

1/2 tsp dried basil

1/2 tsp dried oregano

1/4 tsp salt

1/4 tsp pepper

3 tbsp olive oil
