Ingredients for 4 servings

1 cup cream

6 cloves

1 tablespoon lemon juice

1 inch piece fresh gingerroot, peeled and cut into fine slices, then into fine strips

4 (5 ounce) boneless skinless chicken breasts (weighing approx 1 lb 4oz in total)

For the curry

2 garlic cloves , finely chopped

1 teaspoon ground cumin

6 cardamom pods , cracked open

2 tablespoons tomato puree (paste)

1 tablespoon water

4 tablespoons vegetable oil

salt & freshly ground black pepper, to taste

For the sauce

1-3 hot green chili peppers , cut at a diagonal into fine strips (I use three but I do remove the seeds)

1/2 teaspoon black mustard seeds or yellow mustard seeds

1/4-1/2 teaspoon chili powder

1/2 teaspoon salt

1 tablespoon Dijon mustard

1 medium onion , cut into fine half-rings

1 teaspoon garam masala

2 inches piece cinnamon sticks
