Garlic soup

4 tablespoons grapeseed oil

1 bulb garlic, cloves peeled and sliced thinly

4 sprigs thyme, tied in a bundle

1 sprig rosemary, tied with the thyme

1/4 cup peeled and diced Granny Smith apple

1/4 cup diced fennel bulb

1 cup peeled and diced red potato

Salt, to taste

2 quarts chicken broth

2 ounces butter

2-3 tablespoons Chardonnay vinegar

2 tablespoons butter

1/2 pound Dungeness crabmeat

1/2 cup julienned prosciutto

1/2 Granny Smith apple, skin on and thinly sliced

Freshly ground black pepper, to taste


6 garlic crostini

Fennel fronds or chervi
