Ingredients for 4 servings

3 tablespoons extra virgin olive oil (EVOO), divided

3-4 cloves garlic, grated or finely chopped

1 red onion, finely chopped

Salt and pepper

3 tablespoons tomato paste

1 tablespoon smoked paprika

1 1/2 cups chicken stock

1/4 cup brown sugar

3 tablespoons hot pepper sauce

2 tablespoons Worcestershire sauce

1 tablespoon grated orange peel, plus 1 tablespoon orange juice

2 1/2 pounds skinless, boneless chicken breasts and thighs, coarsely chopped

3/4 cup bourbon

4 scallions, thinly sliced

1 cup shredded cheddar cheese

Two boxes corn muffin mix (8.5 ounces each), such as Jiffy, batter mixed according to package directions
