4 lbs pork tenderloin
1 onion, sliced
1 tbsp whole grain mustard
2 tbsps demerara sugar
1/4 cup dried apricots, chopped
2 oz spinach, blanched and chopped
2 oz cheddar cheese, grated
1 apple, peeled and grated
Add apricots, spinach, grated cheddar cheese, grated apple, and grated orange peel to bowl and mix well
Preheat oven to 350 degrees
Place loin on cutting board, fat side down. Place stuffing ingredients down the center of the meat. Roll meat and tie with a string
Season meat with salt and pepper to taste. Place in roasting pan with sliced onion and 4 tbsp water. Cook for 35 minutes.
After 35 minutes, pull pan and pour liquid into a pot. Squeeze juice from orange into pot. Boil liquid and reduce to make a thin sauce.
Spread mustard on pork, sprinkle sugar over it, return to oven and increase heat to 400 degrees. Cook for another 15 minutes.
Pour sauce over meat. Plate and serve.
