Ingredients

ΒΌ C Extra virgin olive oil

1 large green onion, chopped

2 tablespoons chopped fresh mint

1 1/2 teaspoons fresh lemon juice (you could use lime)

1 tablespoon of honey

3/4 to 1 teaspoon curry powder

1 pound carrots, peeled, coarsely grated

1/4 cup raisins

Preparation

1.

Whisk first 6 ingredients in large bowl. Add carrots and raisins; toss to coat. Season to taste with salt and pepper.
