We love lasagna, but we don’t love what it does to our resolutions to eat healthy in 2014. So, we created this pasta-free recipe to cut down on those diet-destroying carbs. Plus, it’s full of vitamin-packed veggies to ensure you get your daily dose in a delicious way!

Ingredients for 6 servings

2 red bell peppers

1 medium-sized eggplant, cut lengthwise into ¼-inch slices

2 medium zucchini, cut lengthwise into ¼-inch slices

1 large red onion, sliced into 1/4-inch slices

1 medium yellow squash, cut lengthwise into ¼-inch slices

4 portobello mushrooms, cleaned and sliced ¼ inch thick

1 cup Bavaro’s Marinara Sauce

2 tbsp. extra virgin olive oil

8 oz. mozzarella cheese, sliced

¼ cup grated parmesan cheese

1 bunch fresh basil
