1/2 teaspoon Worcestershire sauce

3 sprigs fresh parsley

1/2 cup white wine

3 sprigs fresh thyme

1 egg yolk

5 tablespoons flour

1 lemon, zest of

1/4 teaspoon fresh ground black pepper

1 tablespoon fresh flat-leaf parsley , chopped

10 tablespoons chilled unsalted butter

4 small red potatoes, scrubbed and cut into 1/2 inch pieces

2 slices bacon , cut in 1 inch pieces

1 stalk celery

3 tablespoons ice water

1 onion , cut in half

1/2 teaspoon whole cloves

1/2 cup coarsely chopped chopped carrot

2 bay leaves

3 ounces button mushrooms , quartered if large

Rich Stock

1/2 cup small white pearl onion, peeled

1 cup flour

2 cups rich stock


1/2 cup milk

1 tablespoon heavy cream

3 chicken legs (legs and thighs, about 1 1/2 pounds)

2 hardboiled egg, peeled and cut into sixths

1/2 teaspoon whole black peppercorn

1/4 teaspoon salt

1 medium leek , washed and sliced into 1/4 inch thick rounds

1 tablespoon fresh thyme leave

2 tablespoons butter
