3 cups red wine

1 cup water

Juice of 1 lemon

2 large yellow onions, peeled and roughly diced

3 carrots, peeled and roughly diced

3 bay leaves

10 whole peppercorns

6 whole juniper berries

4 whole cloves

1/4 teaspoon nutmeg

Several parsley sprigs


3- to 4-pound bottom round or boneless rump

Salt and pepper to taste

Flour for dredging

1 tablespoon butter

2 onions, peeled and quartered

2 carrots, peeled and medium sliced

6 to 8 whole cloves

8 to 10 whole peppercorns

1 or 2 bay leaves

4 to 6 whole juniper berries


2 tablespoons butter

3 tablespoons flour

2 tablespoons sugar

1/2 to 2/3 cup crushed gingersnaps

1/2 cup red wine

1/2 cup seedless golden raisins soaked in warm water for 1 hour, then drained
