4 tablespoons fresh grapefruit juice (from about 1/2 grapefruit)

1/2 small fennel bulb, fronds included

2 ounces baby arugula or other loose greens

1 tablespoon olive or walnut oil

1 teaspoon white wine or apple cider vinegar

Cooked rice or rustic country bread
