What a FUN side! I'm making this for Thanksgiving!

We got the pumpkins from our grocery store. They keep for about 2-3 months so you can stock up on them now. Our store had two kinds of mini-pumpkins: the kind pictured and ones that were more round like the size/shape of a baseball- those were easier to cut and tasted better. They were AMAZING.

Ingredients

6 mini pumpkins, about 3 inches in diameter, preferably with stems intact

12 ounces bulk pork sausage

1 egg

1 cup coarse bread crumbs

1 tablespoon minced fresh sage

1 tablespoon minced fresh parsley

-- Kosher salt and freshly ground pepper to taste
