2 pounds skinless halibut fillet

1 red onion, very thinly sliced

4 canned aji amarillo chiles (Peruvian yellow chiles), drained, skinned, seeded and finely diced

1/2 cup fresh lime juice

1/4 cup chopped cilantro


1 large orange-fleshed sweet potato, such as Jewel or Garnet, boiled, peeled and cut into 8 chunks (see Ceviche Limon for method)

1/2 cup toasted cancha (Peruvian dried corn, see Ceviche Limon for method)
