I made this last night... and it wasn't very good. Conceptually sounds good and picture looks good, but just doesn't taste that good. It wasn't spicy enough so I added chili flakes. 2 cups of chicken stock is not enough, more like 4-5 cups! Cannellini beans really add heartiness to this dish. I recommend it over rice.

Ingredients for 4 servings

2 tablespoons olive oil

2 medium onions diced

1 stalk celery diced

1 fresh Poblano chile seeds removed and diced

3 cloves garlic minced

1 tablespoon ginger minced

1 bay leaf

1 tablespoon ground cumin

2 teaspoons ground coriander seed

1/2 teaspoon ground cinnamon

1 pound ground chicken ground turkey also works

2 chipotle chiles minced

2 tablespoons adobo sauce from chipotles

2 cups chicken stock low sodium

1 16 ounce can cannellini beans drained and rinsed
